A restaurant favourite: this renowned cut of beef is extremely soft and tender, with an almost butter-like texture and delicate meaty flavour.

The word chateaubriand actually originates from a French method of cooking but is now widely recognised as this tapered cut of beef from the head of the fillet. Being located higher up it is not as cylindrical as the centre cut.
